When I am chasing DX or just RC’in, I could spend hours in the shack. These “exhausting” hours cause me to be away from the kitchen. And, this in turns starts effecting my “beautiful girlish figure”.  Oh heck, lets be realistic, I am a “fat HAM”. So with this in mind, I have decided to share some of the snacks that I make to pass the hours in the shack. This particular recipe, I have to attribute to my beautiful XYL. It her I attribute my “Adonis-Like” figure. Michelle, my XYL, is a classically trained southern cook. She was born and raised in Ocoee, Florida. You could call her a country girl. There is never a shortage of sweet ice tea in my home. Enough about us and more about the recipe. This recipe should take less than 15 minutes to prepare.  

  1. 2 pkg.  of Cream Cheese (room temperature)
  2. 1/2 cup of Barbecue Sauce1 pkg.
  3. Bacon small chopped tomato
  4. 1/2 cup of diced green peppers
  5. 1/3 cup of sliced green onions
  6. 1-1/2 cups of shredded cheese
  7. 1/4 cup of black olives (I prefer pitted Greek Kalamata Olives — lots of flavor)
  8. 1 Bag of your favorite tortilla chips 

Cook the bacon, and crumble it. Set the bacon aside to cool. Spread the cream cheese on the bottom of the platter you will be using for serving, top this layer with the barbecue sauce. Add the bacon, tomato, peppers, onions, and shredded cheese. Garnish with the black olives. Thats it, enjoy.  de KU5E 

 BBQ Bacon Layered Dip
